Derby Pie


I don't have a picture to go along with the post, but will add one later, when I actually make a derby pie.  

This is the recipe from my mother-in-law (who is wonderful, by the way).   My husband loves it, but I'm not really a fan since I'm not a nut person. (To clarify, I am nutty, but I just don't like to eat nuts.) 

Mix in a pan and bring to a boil:
1 cup sugar
1/2 cup Karo syrup
4 Tbsp. butter

Beat 3 eggs in a large bowl.  Remove above mixture from heat and stir gradually, slowly into the beaten eggs.  Add a couple of dashes of salt and 1 tsp. vanilla.  Fold in 1 cup of pecans and about 1/2 to 3/4 cup chocolate chips.  Stir well, until chocolate is all melted.  Pour into unbaked shell.  Bake at 375 degrees for 35 to 45 minutes (maybe longer).  

(sorry, that's what it says on my recipe, so I guess I'm not sure how long it bakes.  I haven't made one in a long time, so I can't tell you how long it took)

  1. When we first learned we were moving to KY, we checked out a book from the library and the recipe for Derby Pie was included! Ours is made without karo syrup, but I'm sure tastes just as wonderful!
